The Potato Spot is a family-owned food truck restaurant launched by Tabitha Ellison. The Potato Spot was planted in Indiana but the roots run from Texas and New Mexico. Tabitha grew up surrounded by bold flavors, big family gatherings, and the kind of comfort food that sticks with you. “When I moved to Indiana, I brought the love of food with me. I wanted to share the kind of food that reminded me of home, with a little twist of fairground fun.”

That’s how The Potato Spot was born — a humble food truck with a “feel good” feeling, serving up loaded potatoes that bring the Southwest to the Midwest. Our most popular? The combo nacho potato, of course — cheesy, hearty, and unforgettable. You’ll mostly find us at county fairs, where we’re proud to dish out good food, good vibes, and a whole lot of flavor.
